In most years Buty Winery singles out parcels of fruit to make unique bottlings of wines they believe have a singular character. In 2007 the Cabernet Sauvignon from Phinney Hill Vineyard was deemed to be worthy of the Beast label, and the years since then have proven that to be a very wise decision. This is absolutely terrific aged Cabernet. Still with tons of saturated dark fruit, plum, blackberry, loganberry, but also showing lovely bottle age developed flavors of leather, dry tobacco, and smoldering embers. Whilst the sweetness of the fruit remains, the tannins have melded away and are silky soft. Dry stone and dusty earthy show too. A wine that is in its prime for drinking but still has plenty left in the tank for another 5 years minimum. An astounding value at out deeply discounted price.
