The reserve begins life in the same way as the New England White - as Grade A molasses from Guatamalas volcanic soils. The second distillation is where things begin to change - the first distillation is all done on a Vendome pot still, but the second is carried out on a Carl still. This German-style still allows for pure pot distillation or a pot/column hybrid that offers tremendous control. More plates in the column and you've got a cleaner brighter spirit. Less plates (or no plates) and you've got a second heavy pot distillation. The fine tuning here allows for many types of final spirit to be produced and add incredible complexity to this affordable aged rum. It enters the cask at 100 proof (quite low) which allows for a full extraction of the barrels flavors - both the water soluble and alcohol soluble compounds are brought out, again adding to the wide range of flavors in the final spirit. After aging, the rums are brought together in a final blending stage. The range from 2-8 years old. The end result is an especially full flavored rum of integrity. No sugar additions, coloring, or filtration has taken place. Excellent for sipping or cocktailing.

This rum is 45ABV and is soft and ready to consume. Like all of the Privateer rums there is no sugar added and the high quality shows. There is a nice richness with hints of caramel. This rum can be used in cocktails or one could drink it straight.

The reserve is a blend of 2-8 year old barrel's that, once blended, are proofed down and then allowed to marry in a used oak barrel. this creates a rum that has far more heft than something at 90 proof should with tons of butter and baking spice on the nose that intermingles with notes of grilled peach and apricot. The palate is dense and complex with this lovely blend of candied fruit, spice, and cream. This is one for everybody and will be just as welcome on its own as it will be in a cocktail!
