The Tom's Foolery Distillery outside of Cleveland is easily one of the most exciting craft distillers in the States. Tom Herbruck is a true distiller, who fell in love with the craft as a kid distilling his fathers wine as a hobby. When he began to take it seriously he made the incredibly precient move to acquire a historically significant set up from the old Michter's Distillery in the Schaefferstown, PA. For several years, Tom distilled a variety of single barrels of various mashbills and was able to make a name for himself releasing some of the first craft bottled in bond American whisky since the craft boom started. He's since sold the old pot stills and replaced them with a gorgeous pair alembic stills from france, but he continues to make extremely high quality whisky and applejack and sell it for very reasonable prices. We've been buying from Tom and his wife Lianne since 2016 and the whiskies are starting to take some serious age. This amazing bourbon barrel is the oldest we've yet found in Tom's rack house. Distilled on February 22nd of 2013, it was distilled from a mash of 51% yellow dent, 26% 2 row malt & 23% winter rye. Sour mash starter and fermented for 3 days in their antique cypress fermenters, it was double distilled on the old Michter's Jug House pots. Filled at 108.6 proof into a new Independent Stave Cooper's Select on February 25th. It aged for 7 years and 9 months in Tom's Rack House #1. Bottled at cask strength (110 proof) without chillfiltration.

If you've never had a bourbon from the great state of Ohio, start with this bottle from Tom's Foolery. It perfectly balances high proof with flavor. Once you've enjoyed the rich caramel and honey, and savored the long, warn finish, you will marvel at how easily a cask strength bourbon went down. This is also one of the least expensive cask strength offerings on the shelf. These will go fast.

It's been so gratifying to experience the progression of the Tom's Foolery stocks over the years. Their bourbon has always been a favorite of ours, but it's also distinct from anything else on the market because they're really doing it the old school ways. Oily rich and full of life, these spirits all tend to get better in the bottle, but this bourbon is cracking right out the bottle. The color is a brilliant amber. The nose is earthy spice, dark roasted oak, hints of stewed stone fruit and dark chocolate powder. The gorgeous nutmeg and cinnamon continue the palate, with plenty of the dark roasted flavors coming through and a rich Werther's caramel to balance. I often recommend adding water to this type of barrel proof pot distilled whiskey, but this is just perfect at 110 proof. Water seems to push the wood away and leave some astringency that wasn't otherwise evident. In any case this is one of the most interesting craft bourbons on the market. It doesn't have the overt sweetness of some of the industrial versions distilled in KY, but it more than makes up for it in character. It also loves air, already after writing this the glass has continued to improve. A totally unique and delicious experience.
