Ocho's tequilas are made by Carlos Camarena, a third-generation Tequilero, and Tequila Ambassador Tomas Estes. And each single vintage bottling comes from a single estate with its own mesoclimate, making them the most terroir-driven tequilas on the market. This collaboration seeks to distill the purest form of agave to highlight the distinct flavor differences between agave grown in different terroir. Carlos uses estate-grown agave and traditional methods to slow ferment and distill his specially selected agave. Ocho is always aged in used whiskey barrels so as not detract from the incredible depth of flavor that this special spirit exhibits straight off the still. This is the rare instance we've had access to old stock from the excellent Ocho brand. 100% of the agave was grown on Rancho El Vergel (The Orchard) and distilled entirely in 2007. Located 6 miles southwest of Arandas at over 2000 meters altitude, the cool climate, slow growing rancho produces high quality, but small agave with an average weight of just 87 pounds. This special product has been rested in glass for over a decade. Tasting notes from the distiller, "Colour:...light clear brilliance. Nose:..powdered sugar...hints of cinnamon, orange peel, plum and caramel. Palate:..cinnamon, brown sugar, apricots and toasted almonds. In the middle comes some plum, lavender and black olives. This complex tequila finishes with coffee and cacao accents."
