Satsuma peel, aromatic florals, and a low level of aromatic spices, then fruit syrups and a hint of olive oil on the nose: It’s clean and bright, with plenty of sweetness. The citrus, toffee, and salted-caramel sweetness of the palate are disrupted by a shockwave of pepper, leaving tangy peels, hints of nuts, and sour gooseberry in its wake before a finish of citrus and sweet barley. This golden single malt offers aromas of hay and white flowers. The palate shows vanilla and toasted grain, echoing the hay note in the aroma and layering a hint of banana. The finish is long and juicy, with a hint of pear sweetness. (KN)

Waterford is the newest whiskey project from Bruichladdich front man Mark Reynier. In their Arcadian series they sought farmers whose ethos, way of life and use of the traditional farming techniques in the pursuit of quality over yield and consistency, offer an unprecedented exploration of the flavor potential offered by the highest possible raw materials single malt can offer. Gaia, the divine personification of Mother Earth, represents a future of sustainable production for an industry that's never considered the needs of our planet in advance of their commercial needs. John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris rose to the challenge proposed by Waterford helping to create Ireland’s first whisky distilled from certified organic Irish barley. This was bottled without any additives, chill filtration or coloring at 100 proof. The cask composition is 42% first fill US oak, 17% virgin US oak, 23% premium French oak and 18% Vin Doux Naturel. TÉIREOIR CODE: OR01E01-01. The first is letter "O" then zeros "0" after that.
