This Champagne is made in the Sézanne, a terroir within Champagne whose product is rarely seen in the U.S. It is aged for five years on the lees and is done on a cork rather that a crown cap, a process usually reserved for much more expensive wines, most famously Bollinger vintage. This is an amazing Champagne with perfect balance between crisp citrus, brioche and touch of toasted almond. It was a great match for grilled lobster tail. The freshness of Champagne paired beautifully with richness of lobster and elevated all flavors. At this price this is just unbelievable every day Champagne that can stand up to a serious meal as well.
