In 2000, Loic Mahe revived and replanted his first vineyard in Savennieres. Loving the primarily schist (shale) soils and how they express Chenin Blanc, Loic eventually cobbled together several other sites within the appellation and nearby Anjou. Certified organic and working biodynamically, he uses all native yeasts and low sulfur additions. The Sables & Schist is comprised of Chenin farmed from sables (wind blown sands) and schist. All fermentation and aging for this wine is done in fiberglass tanks, preserving the freshness while taming some of the vibrant acidity of the region.
