This is a bit more elegant than the Les Clos with its ripe, pure and pretty aromas of lavender, apple, wet stone and white orchard fruit scents that are trimmed in soft though not invisible oak nuances. There is very good density to the relatively restrained medium-bodied flavors that possess plenty of minerality on the rich, sappy and palate coating finale. This is a really lovely effort that displays the natural class of a fine Preuses.

Subdued apple and apricot nose, with a light toastiness. Rich and creamy on the attack with impressive depth of fruit, though it lacks a little brightness and tension. Nutty notes lead into a finish of moderate length.

The 2015 Chablis Grand Cru les Preuses comes from 30-year-old vines and spent 20 months on the fine less in stainless steel and oak barrel. It has a gorgeous bouquet, with vibrant apple blossom and granite scents that are precise and intense. The palate is well defined with neatly integrated oak, the acidity very well judged and the second half delivering a very harmonious, lightly spiced, almost Asian-inspired finish. There is plenty of character in this les Preuses, and it comes highly recommended.
La Chablisienne is the major cooperative in Chablis. That fact alone might put some people off their wines. It should not. The quality here is miles better than it was just a decade ago and while the entry level wines at village cru level appear to be compromised by the warmth of the growing season, once you broach the premier cru and grand crus, you might be surprised by the quality. All of these wines were tasted blind with the BIVB. The most successful crus are the Côte de Léchet, Montée de Tonnerre, Les Preuses and the Château Grenouilles. La Chablisienne might not have the cachet of producers like Raveneau or Dauvissat; however, as an introduction to Chablis and as an introduction to some of its finest vineyards, this is a good place to start.
