The wonderful and affordable Metiche 49 is produced by Mezcalero Juan Manuel Perez Juarez in Charcas, San Luis Potosi. The old Hacienda Laguna Seca is relatively large and provides spirits primarily for regional brands. This high elevation terroir, over 6500 feet above sea level, and the slow growing agave salmiana, give the Metiche one of the most complex and nuanced flavors of any mezcal on the market today. The distillery hasn't changed it's production practices for more than a century, but this is not the big smokey mezcal some are expecting. The flavor profile is powerfully rich with fruit and capsicum aromas. The agave verde (salmiana) are at least 13 years old before harvest and roasted in above ground adobe ovens over dried pencas and local underbrush (tumbleweeds and other fuel). There's no local source of timber, so they use what they have. The roasted pinas are crushed on tahona driven by tractor before natural fermentation in stone tubs with spring water. Distilled twice on the unusual 100 year old UFO shaped three plate "pot" still that are used in San Luis Potosi, the resulting spirit exemplifies the style of this yet to be discovered region.
