It's fermented in concrete to preserve freshness, before ageing for five months in large oak barrels. It displays ripe, vanilla-scented hedgerow fruits with a fresh, crunchy, sweet cherry aroma. In the mouth it has impressive intensity and plenty of playful acidity. The dark fruit flavours are supported by a supple texture and the nuances of spice are perfumed and exotic. The nose is textbook Nebbiolo, cherry, tar and tea! A hint of rosemary oil and sweet red beets and carrots follow in the back. Red plums, cracked peppercorn and hibiscus tea all follow in the texture and the mouthfeel. This wine doesn't shy away from tannins so be sure to have this with a fatty cut of meat, you'll get the most out of this wine.
