According to Whiskey Advocate: "Although Louisville’s Kentucky Peerless Distillery uses sweet mash to create its rye and bourbon, Baker and Heist believe that Wilderness Trail was the first Kentucky distillery to embrace the process as the sole mashing technique. (In fact, Baker and Heist assisted Peerless in selecting their yeast strains and designing their sweet mash process.) As with clean steam, sweet mashing—rather than the practice of sour mashing, where a small amount of fermented mash is included in the following batch—is meant to produce a softer, cleaner distillate. 'Sour mashing is often used for bacterial control, but you lose the flavor consistency in the stillage,' explains Heist. 'With sweet mashing, the yeast, grains, and water are consistent from batch to batch.'"

A tasty and wonderful addition to the bourbon selection. It is soft and round with a nice mouth feel, with caramel and honey flavors. With a splash of water it really opens up and becomes much more expressive. It is good both ways.

I've read about Wilderness Trail for a long time now hearing great things from Bourbon insiders and up until recently it was only available in Kentucky so I hadn't been able to get my hands on it. Now that they have officially been incorporated into the Bourbon Trail and expanded to California I of course had to snatch up a bottle and boy was I in for a treat! There aren't terribly many sweet mash producers these days but Wilderness Trails founders specialize in yeast so they cultivate strains that allow for consistent and delicious whiskey. The nose is sweet and full of vanilla, nougat, and caramel. The palate is bold, round and sweet with a nice baking spice note and a bit of a bitterness on the finish that helps cut down on the sweeter wheat notes and balances the drink! Get them while you can, once people discover this one it'll be gone before you know it!

All the technical details are above so I'll spare you those, however this is an absolutely beautiful and surprisingly elegant Bourbon. I wish I had more experience with sweet mash Bourbons in order to identify what exactly it contributes but in the end what matters is in the glass. The smooth creamy lightly carameled and mid bodied palate weight is very easy to drink even neat, it comes off with a finesse that is hard to resist
