K&L Notes

Séverine Bourrier came to winemaking through her own passion for the subject, not having the family history associated with so many winemakers. She studied oenology in school and worked in Bordeaux for a decade. After meeting her husband, they relocated to a property an hour outside of Perpignan in the Roussillon. They began restoring an old château and did some replanting, rechristening the estate L’Ou, which is Catalan for "egg." The property is in an oval-shaped valley that was used as a rest area by herd animals and likely the Knights Templar on their way to various crusades. The estate consists of three primary terroirs: the alluvial marl soils that make up the valley, and two higher-elevation sites, one made up of black schist and the other brown. Their key grape variety is Syrah but Séverine also grows the classic regional varieties like Grenache and Carignan. The "Infiniment" Côtes Catalanes comes from the marl and alluvial soils near the estate. Made from 100% Syrah, it has a powerful nose with copious, rich, ripe fruit and spice box aromas. On the palate it is refined, delivering its power in waves, so as not to overwhelm. Excellent now or for a few years in the cellar. *Organic*

The 2016 Infiniment was a superb followup to the 2015, but I must say the 2017 is probably my favorite to date. Loaded with framboise, kirsch and spices, this is a saturated and supple red that explodes out of the glass while never overwhelming. It is lush and polished and will be one of the great drinks on your table for years to come.

A dense bouquet filled with earthy and smoky elements that threaten to overpower the blueberry and black cherry notes that end up shining through. The palate is an explosion of fruit, dark and just slightly chewy, with a long and lingering finish. Relatively balanced tannins and acidity lend this toward a hearty meal.

This is such a beautiful bottle. I thought the 2016 vintage was as good as they come, but I have been proven wrong! The bouquet explodes with young, fresh dark berry notes, wet rock, and a touch of dark floral (maybe lilac). Insanely silky, this medium-bodied Syrah has a delicate acidity that balances out some of the richness and paves the way for a tasty palate of sweet fruit, vanilla, and a touch of spice.

The Chateau de L'Ou Infiniment is a very pleasing hybrid style of old and new world Syrah. There’s plenty of fruit up front, from blueberries to blackberries with a distant hint of cassis. But for the all the forward fruit, there’s also a charming old world backdrop of wood spice, forest floor, and a floral note. This wine isn’t shy but it’s quite polished so as to not overwhelm the taster. This would make for a nice after work glass of red and would absolutely be a wonderful compliment to savory stews and roast meats.

A burst of fruit, dark cherry and vanilla cola. Dark and chewy color with mouth filling tannin and surprisingly juicy for such a rich wine. Very clean rich modern style. Bold yet elegant. A perfect pairing with a warm fire and book.
