The incredible selection of Single Palenque Mezcals from Maison & Velier is finally here. Some of the finest mezcals in all of Oaxaca curated by the exceptional palates at Maison du Whiskey and Velier and bottled as it's found without any adjustment or alteration, these are the Palenqueros. Not only are these some of the world's most delicious and unique agave offerings but they're sold at an incredibly reasonable price considering where the market for rare agave is going. In addition, Maison & Velier are committed to treating their distillers right and highlighting their incredible skill and experience on each bottle. The wonderful mezcal from the palenque in Bramaderos run by Onofre Ortiz has never been exported to the US. Onofre is the son of Alberto Ortiz whose excellent mezcals have been featured in several prominent brands. This incredible blend of agave is made the old way. Using multiple varietals of perfectly ripe agave, roasted together for a unique expression that can never be recreated quite the same. Here Senor Ortiz selected wild and cultivated agave Espadin, Mexicano, Madrecuishe, Bicuishe and Tepextate roasted underground over oak and mesquite. Hand milled using mesquite mallets on stone and fermented naturally in pine vats. Double distillation in 350 liters over direct fire and bottled at still strength of 48% abv.

This ensamble succeeded in balancing all the different species of agave that went into the blend, they harmonize beautifully as each simultaneously complements the other as well as having their solo’s. The first notes to come off the nose were blueberries and bacon, followed by dill pickles, fresh cut sweetgrass with a stone-like minerality overseeing the stage. At first, sipping on this was like taking a sip of fresh river water- very smooth with almost no burn and a very slight minerality with a slightly creamy consistency. Then the alcohol starts to creep in, which introduced more players to the stage- prickly pear and a very light note of raspberry hard candy. The finish had a bright citrus tone with menthol and lidocaine and aloe joining for a surprising encore.

This Ensamble made for a very pleasant surprise. Exceedingly fresh and floral. My first thought was of a breeze through a meadow in summer. Sweet flowers and chamomile paint a charming picture, fleshed out by melon and white peach. Between a chalky mineral character and touch of cinchona bark on the finish, it whets the appetite like an aperitif wine — one that I could drink all day.
