It seems to be getting more and more rare to come across wild, single species offerings these days, and with little surprise. The boom in the agave spirits category caught everyone off-guard and the wild varieties of agave that used to be relatively available have dwindled and cultivated plants are starting to become the norm. This wild tobala is a cornerstone for the species, it’s everything I want and expect out of a well-crafted wild tobala bottling. The aromas are creamy and delicate with notes of blueberries, apple, charred strawberries, lemon verbena, and roasted agave. The palate is easy-drinking, smooth, and quite fruity; never-ending gobstopper with undertones of pepperoncini deliver an evocative experience with this wild species. Dollar for dollar you can’t get better than this and who knows for how much longer we’ll see wild offerings on the shelf, especially at this price.

As one might expect from Tobala, the aromas are delicate, pure and graceful. White flowers, vanilla and lanolin waft effortlessly from the glass, evoking an ethereal and elegant profile. What separates this is the finesse it displays. Rather than wildly tropical, the palate feels creamy and silky. With a whiff of cracked white pepper and a savory but fresh finish, it is easy to see why Tobala is so highly prized in Mezcal production. While displaying tremendous subtlety and restraint, this bottle by no means lacks flavor or intrigue. Truthfully, I find myself wishing I had more.
