We'll enjoy an unbelievable 5 course Kaiseki meal designed by Chef Abe Hiroki alongside a flight of Mr. Camus' own distinguished creations. Regis Camus was the cellar master for Piper-Heidsieck for more than 15 years before retiring to lead their recently created RARE line of vintage offerings. The award winning winemaker is a living legend among the world's most elite in the business and has recently lent his talents to an incredible new project in Japan. HEAVENSAKE is his new baby and he's taken all the knowledge and expertise of his decades in Champagne and applied it to a new medium. Partnering with some of Japan's most renowned brewers, Regis has meticulously created a line of sake unlike any other. Taste his creations, the '02 & '06 Rare Vintage & all three of the excellent HEAVENSAKE expressions, with this incredible menu: bluefin tuna & avocado, kanpachi marinated in white sesame sauce, Hokkaido scallop with summer truffles, assorted sashimi, saikyo miso marinated black cod, lobster shabu shabu hot pot, miyazaki wagyu beef with soup and salmon rice pot and for desert housemade cheesecake with matcha ice cream.
