There are few distillereies that would entertain the idea of collaborating on such a project. Made with Hog Island Oyster Co. using their signature Sweetwater oysters form Tomales Bay. OsCo crushes 200 whole oysters with their forklift and then tosses 'em into the pot with a bunch of botanicals and tons of juniper. The oyster quality inhabits the texture and provides an incredible minerality. There is a little of that good savory oyster goodness when you taste it neat, but the flavors explode as soon as you add any classic gin cocktail ingredient - think vermouth, Chartreuse, or Luxardo.
