Allen Meadows writes: "Jacques Bavard is a former Paris restaurateur and a fifth generation Puligny winemaker. He lives in the old stone house of his grandfather on the Grand Rue. However, he is not farming his family vines but has become a micro-négoce working closely with several growers. Bavard prefers early picking since he believes Burgundy needs nervous energy to better display its terroir. He works with a mix of conventionally-sized barrels (and with 350 liter barrels) with the goal of obtaining more volume on the mid-palate but with less wood influence."
