Father and son team Victor and Emmanuel are 3rd and 4th generation to distill in Mengoli de Moreals. Their palenque was set up 20 years ago and before that they worked at their grandfather's, Pablo Ramos Sanchez. This area, Miahuatlan, is renowned for the abundance of Karwainski (Madrecuixe, bicuixe, tobaxiche) and the use of an unusual additional apparatus on their copper potstills called the "refrescador". The refrescador sits on top of the potstill like a mini water cooled column. It catches and condenses the heaviest spirits as form further rectifying the spirit slightly, but also adding depth. The result are some of the most pure agave driven mezcals in Oaxaca. The Ramos family is well known to produce some of the regions very best spirit. They have two underground ovens, one with 13 and the other with 8 tons of capacity. Roasting take between 6 days over oak, alder and mesquite wood. The Verde is cooled for 6-7 days before milling on an ox drawn tahona. Fermented in open sabino vats for 4-8 days using local well water. After double distillation adjustment is with heads and tails of the second distillation - "Puntas y Colas". Distilled in February 2018 and bottled on May 9, 2018. Only 256 bottles were produced of this rare variety.

If I could only use a few words to describe this fabulous mescal they would be delicious, intense and concentrated. The aromas are smoky,savory and intense. In the mouth there are concentrated smoke and savory flavors that are packaged with a nice sweet wrapping. There is a long finish.

To be fair, this sample had been in a 50ml bottle with a bit of air in it but damn is it smooth. I had to double check the proof to be sure but at 52% this is way too easy to drink. Mal Bien seems to have found a way to produce quality, single species mezcals at a great price. The nose on this Verde followed its namesake. Very green notes of fresh poblano pepper and pine dominated with a sweet hickory undertone and a cement minerality. Sipping this was like candy, smooth and sweet with notes of quince and white pineapple. The finish has a bit of spice to it, which contrasted nicely with how clean and soft the juice was. This verde does not disappoint!
