From NETA: Hermogenes García Vasquez is the Mezcalero for the NETA Bicuishe. Hermógenes and his wife, Paula Aquino Sánchez, both descend from a long line of palenqueros from the villages outside of Miahuatlán de Porfirio Díaz.Carrying on the family tradition of growing agave, they plant Espadín, Tobalá, Bicuixe, Madrecuixe, and other local varieties on the lands that surround their ranch in Lachigüizo. Hermógenes and his family always work in congruence with natural cycles and family tradition.They plant and harvest in accordance to moon cycles, and their maguey matures alongside their annual crops of corn, beans, and squash. Our friendship with this family keeps us coming back to Lachigüizo, and has allowed us to develop the close partnership we enjoy today. Hermógenes and family are some of the kindest people we know, and they make some of the best distillates in the region. Soil type: colorada, roja, cascajo, and negra Oven: 7-ton capacity, conical, earthen oven Mashing: machete and mechanical mill Fermentation: 5 Montezuma cypress wood tanks. 1000 - 1200 liter capacity. Distillation: Hermógenes and family use one 250-liter capacity copper pot still, as well as a second 300-liter copper pot still. All of the family‚Äôs batches are double-distilled and are mixed down and composed using the heads (puntas), heart (cuerpo or corazón), and a select cut of común (also known as shishe or ordinario) from the first round of distillation.

This is very interesting and delicious. The nose in absolutely fantastic with a touch of smoke and bright floral and tropical fruit notes. The bouquet is layered and is very inviting. In the mouth the floral and fruit theme continues. By fruit, I mean, bright fruit flavors but not fruity or sweet. There are also savory notes, helping make this a very complex spirit. There is long finish.
