A mix of Chardonnay and local variety Rumeni Plavec makes for one of the most interesting sparkling wines we've had in some time. The primary fermentation is done all with native yeasts in stainless. Then wine then undergoes a secondary fermentation in bottle and is aged sur latte for several years before disgorgement and release. *Natural Wine*
