The more liner and focused of this producer's offerings, the "Cuvee Instantannee," is still as bright and fresh as Trudon's other offerings. The warm richness is always balanced in this catalog by a fun, open palate that is a little off-the-wall but a ton of fun. I like this a lot for an aperitif, or for the upcoming holiday toast.

Instantannee keeps the 70% Meunier of the Emblematis, but with a remaining composition of 20% Pinot Noir and 10% Chardonnay. It’s almost shocking how different these two wines are though! While the Emblematis is soft fruits and savory characteristics, Cuvee Instantannee crushes it with huge citrus. Tangerine, lemon, and orange blossom with a nice little kick of green apple too. The palate begins with grapefruit then manages to get richer with further sipping without ever losing that mineral line of acidity. Quite complex and infinitely pleasurable.

Having blocked 80% of the malolactic fermentation on this sparkling wine, the chalky, mineral-driven acidity is front and center in this wine. That proves to be the correct decision with a vintage wine such as this which develops a beautiful, toasty, rich character from the extended time on the lees. This Champagne is complex, and intense in its length, and coming from a bigger Chateau would be 3X the price.
