Diplomatico is a rum the defies categorization. It's very existence complicates the old understanding of the rum category. It's easiest way to categorize rum, is to three basic categories based on the colonial history that of each territory - Spanish, French or British. This is a serious over simplification of this incredibly diverse category and the rums coming out of Diplomatico are a perfect example of why. Diplomatico uses a blend of multiple stills: the Barbet column, batch kettle, and a pot still. Unlike many rum distillers, warehousing is static, much more like whisky production. Various blends of molassaes and sugar cane honey are fermented distilled on different stills to create different weights of rum for blending. This collection gives us a window into the components the blender uses to create the house style. The Barbet column stills were brought to La Miel distillery in 1959 from France. A blend of molasses and cane honey are fermented and distilled on this continuous system and is the closest to what might be considered a "spanish style" rum. The result is a unique and complex light rum unlike any other. The distillery collection is one of the most interesting and unique lines and illucidates the complexity that exist in the creation of rum. Only 5000 bottles were produced world wide of this limited edition offering. No sugar was added before bottling at 94 proof.
