Bimini Gin is named for the setting of Ernest Hemingway's posthumously published work, "Islands in the Stream." The main character, a painter named Thomas Hudson, drinks gin with coconut water, lime, and bitters, using this tropical paradise and its endless summers as an escape for his normally tumultuous lifestyle. 1,300 miles north a little distillery took that notion of tranquil freedom and was inspired to create this gin. Starting with non-GMO neutral corn, the gin takes traditional botanicals and adds some unique botanicals. Framed around the core of juniper, coriander and orris root are dynamic flavors built around aromatic barley malt, Mt. Hood hops, chamomile, and grapefruit peel. The resulting spirit is viscous and oily while remaining extremely lifted and bright. The hops add a fresh herbal citrus quality while the aromatic malts offer a deep peppery spice. Proofed down with water from the Saco River, which along with the invitingly high proof is creates an awesome chewy mouth feel. While the unusual ingredients might seem to indicate an out of bounds flavor profile, but not far enough out to make this a bad choice for all the classic cocktails. A welcome addition to the ever expanding world of modern craft gin.
