Les Fourneaux is a Premier Cru vineyard site on the eastern edge of Chablis, located in a valley near the small village of Fleys. The vineyard is named for its warm meso-climate (fourneaux means "furnace"), and the Chardonnay-based wines produced here tend to have ripe, tropical flavors alongside their intense minerality. Winery note: "This subtle and delicate wine has a very aromatic bouquet. We discover notes of flowers (acacia) and rose petals, accompanied by a aroma while lightness of vanilla. It is a very round wine on the palate, with a tip of acidity allowing it to keep its freshness. The 1er Cru Les Fourneaux will go very well with roasted scallops or a casserole of fried chicken with morels."
