 George Gavalas is the fourth generation of his family to run this winery in Megalochori. He vinifies this assyrtiko entirely in stainless steel, producing an austere style, focused on lemon, salt and stone, almost searing in its intensity.  (8/2017)

 The 2016 Santorini, sourced from vines aged from 80 to 100 years old, is unoaked and comes in at 13% alcohol. On Santorini, of course, it seems like everyone can boast of really old vines for various bottlings. The issue is how you use the grapes. This is in fine form, elegant, yet gripping, with very good tension on the finish. The mid-palate concentration is average, but it makes its way with that fine grip on the finish. Fresh, lively and clean, with just a bit of that saltiness, it shows well now, but it should be able to hold a few years, too. Let's be conservative there--but this may do better than anticipated.
