The brainchild of industry legends David Phinney and Rosendo Ramirez Senior has arrived! This tequila has incredible pedigree. The agave comes from fields in the highlands of Jalisco at 7000 ft elevation. The cool nights, warm days, and iron rich soils provide ideal growing conditions for the agaves and lead to a perfectly mature and ripe pina. Rosendo Ramirez Senior oversees the harvest and hand selects only the finest agave for the Ayate. The agave hearts are then cut into quarters and slowly steamed for an extended period to release all of the sweet juices from the ripe plant. Distillation happens in traditional copper pot stills and then the tequila is transferred into Dave Phinney's wheelhouse. The Anejo spends 12 long months in wood. Two months in new American oak barrels, four months in used French oak, and the remaining 6 months in Chardonnay barrels from Dave's wine projects. The extra time in wood gives the Anejo a tremendous richness. It's downright luxurious.
