The Tom Cat Gin is one of the best barrel aged gins we have ever carried. The gin is pure, elegant and focused. Made with a single botanical -- juniper -- and finished with raw honey from the hardworking bees of Vermont. The gin is aged for six months in new American oak. The quality of the oak is spectacular. Each barrel is used only once and imparts delicate vanilla, clove, and cinnamon notes to the gin which complement the smooth and full mouthfeel. Caledonia Spirits had me hooked the moment I opened a sample of the outrageous honey they use to make their gin. This veritable nectar of the gods could literally make anything delicious. Now take an ultra high quality gin, age it in good quality oak, and add just enough honey to feel it, but not enough make it particularly sweet and you've got one of the most dangerous concoctions on the market. Aromatically unique, encompassing a huge variety of complex flavors, Barr Hill has created one of the most successful barrel aged gin I've yet come across. Sip it straight or in the place of whiskey in certain spirit driven cocktails.

Caledonia Spirits has done a wonderful job on this gin through intense focus. There is only one botanical - Juniper. The complexity comes from one added ingredient. The gin is finished with raw honey from the local Vermont bees. This special spirit is then aged in new virgin oak casks for a short period of time. The end result is spectacular. The nose is bursting with juniper, floral blossoms, and graceful oak spice. The mouth feel is rich and bright with the endless complexities of high quality honey highlighted through the sweet oak spices. Many gins see oak because it's the trendy thing to do. This gin see oak because it elevates the quality to a whole new level. This is far and away the best barrel aged gin I've had.
