 Delivering a buttery mouthfeel with toasted rye and baking spice notes, Peerless is the only craft producer on our list. It’s hard to pinpoint why this young rye succeeds where others fail, but one point of difference is the use of sweet mash fermentation, rather than the much more common sour mash technique, where spent mash is added to the new fermentation. Furthermore, the Peerless warehouse achieves temperatures upward of 110 degrees. One of the most exciting new producers in Louisville is the Kentucky Peerless Distilling Co. The owner, Corky Taylor is what some might term a renaissance man. To an outsider, he's like some surfing cowboy diplomat with more stories than Jimmy Russell. People who know him well probably say he just likes to keep busy. He's endearing, generous and always authentic. After selling his company, Corky found retirement unbearable. He set out to recreate his great grandfather's whiskey brand. Henry Kraver was a Polish jew who came to Kentucky and bootstrapped his way into running a large, successful distillery in Henderson, Kentucky. He passed away in 1938, but not without leaving his mark on the Kentucky distilling industry. While the history is rich, the whiskey is even richer. These guys have spared no expense to put together one of the finest operations in the country. Corky along with his son Carson are committed to producing the most consistent high-quality whiskey in Kentucky. Using a sweet mash and advanced systems to control fermentation and distillation, they've spared no expense. They're also using a very low barrel entry proof. The result is whiskey that's shockingly good for its age. Yes, it's VERY expensive. They don't seem to care. It's a labor of love and this is what a bottle is worth to them. You may agree or maybe not, but there's no question we'll be watching what these guys do over the next decade. If they play their cards right they could be one of the greats.
