2016 Zabala Natural Cider Pais Vasco (Previously $10)

Along the northern coast of Spain they grow at least a few dozen varieties of apples: mainly ones that are high in acidity and have varying degrees of bitterness. In other words, they grow apples that are perfect for making cider! Zabala is our first direct import cider from Spain or anywhere for that matter. An award winning Basque sidra, it's crisp and tangy with hardly any effervescence. It is a fantastic tipple, particularly in the autumn, served with anything you can imagine. That said, if we're consuming it how they do in the province of Guipuzkoa, it would be year 'round, with pintxos or bites of tortilla, or as they do during the release of the new cider, with a generous portion of tortilla de bacalao, chuleton (a huge grilled steak,) and Idiazabal cheese with membrillo and walnuts. Atlético de Bilbao drinking songs optional!

I am pretty new to tasting imported ciders and must say that this one is a clear winner for me! It's clean, crisp and overall not as "funky" as some sour ciders can get. It's a great balance with a sourness and chalkiness on the nose, which you'll find compliments the flavor. If you're looking for a gateway cider this one is it!

Produced from a blend of indigenous Basque apple varieties, Zabala is a delicious, authentic expression of the local sidra from the province of Guipuzkoa. It's very tangy to be sure, but also expressive, appley, and once you've developed a taste for it, very little if anything else will do! Enjoy it with cheeses, charcuterie, tortilla espanola, or even as they do locally during the celebration of the new cider release, with a nicely grilled bone in ribeye steak.
