Made to order at our request, our friends at Copper & Kings in Louisville, Kentucky about knocked our socks after pouring us a couple of house-made gin and tonics on our last trip out to Bourbon country. Using their supple and fruit forward apple brandy as a base (unlike 99.9% of all gins that use grain neutral spirit), the gang at America's favorite brandy distillery does a two step infusion process that follows a more classic pot still double distillation. The juniper berries and additional botanicals are first soaked and macerated into the "low wine" (the first apple distillate), a spirit that clocks in at about 35% ABV. Then, during the second distillation, a botanical basket is hung in the still, allowing the vapor to pass through the orange peels, lime peels, and lavender. Ultimately, the Copper & Kings gin is really just a flavored, unaged apple brandy that happens to taste a helluva lot like a traditional London Dry gin with a softer, creamier mouthfeel and a bit of a fruity lift. We were absolutely hooked after our first sip; so hooked, in fact, that we forced distillery owner Joe Heron to make us our own batch before leaving. Created on the tiniest pot still in the facility, each batch is roughly 120 bottles-the size of our order! Clean and crisp, with elegant juniper notes and a beautiful integration of the additional botanicals, this is easily the best American gin we've tasted in years.

My colleague recently told me that he intents to create a database for all of our gins and what our favorite cocktails were with each one. I loved this idea because I have several gins at home and I use different ones for different drinks. This is because gin is still probably the bartenders best friend, one of the most versatile of spirits with an ability to showcase a particular place and play with other flavors. That being said I am definitely going to put a bottle of the Copper & King into my bar because I feel like it is going to make some amazing cocktails. This is a big bold style gin with plenty of citrus and spice. However, this is not out balance at all, the flavor all works with each other. Lot's of aromatics and botanic notes hint at some amazing ways to play with this gin.

One thing to know about the C&K American dry gin is that it's made on the smallest pot still in the facility, which according to Joe only yields about 120 bottles worth of gin per batch—exactly the amount we ordered in our initial ten case purchase. Smelling my first glass of the newly arrived hooch, I can already sense the differences from the bottle I originally brought back from the distillery this past Spring. There's a bit more apple must on the nose and the finish is creamier and tangier in profile. My point in mentioning that is: this is real small batch gin, in that it will taste a little bit different each time we order it. Joe is making it especially for us each time, so while the recipe will remain the same, the subtle nuances of the apple brandy base will vary from batch to batch. Other than the wildcard of a base material, the C&K American dry gin drinks much like a classic London dry style. Bright juniper notes, lifted by the coriander, with a fresh and spicy finish. In a gin and tonic, it's absolute heaven. It's also my new favorite gin in the store. I highly, highly recommend getting one.

It is a good time to be a gin drinker. There are so many high-quality gins available to choose from. This Copper Kings American Dry Gin is another creative and delicious addition to this category. It has beautiful aromatics of juniper, lavender and citrus. In the mouth the botanicals take first place, with the citrus adding secondary notes. The base is from distilled apple wine, which adds an additional splash of interest.

Copper Kings nailed this fantastic batch of gin! Not only does it have great lift from intense juniper flavor and brightness from a great blend of botanicals, it also has texture. This is going to feature often in gin and tonic drinking in the future!
