Yuu Baal's selection of wild agave expressions is one of the best we've ever tasted (meaning the agave species must be foraged and found and cannot be cultivated or farmed). Tobala is usually the ultimate test of a Oaxacan distiller's craft, and in this case the Yuu Baal passes with flying colors. There are textbook Tobala notes of earth and sweet, plant-like flavors that morph into a rather peppery note on the finish. It's an elegant expression of the famed wild agave on all levels. Cooked in a concave stone oven, milled by stone roller, wild fermented in oak vats, and double distilled on copper pots. Rested for 12 months in glass before bottling to mellow. No longer available in 750ml format, this is your last chance to stock up on full-sized bottles and save big.

Sexy, sweet, and savory. This is a luscious example of Tobala and incredibly well balanced. The wild, stout Tobala is extremely coveted. The yields are low due to the smaller piƱa size when compared to many other varieties. Tobala has more of a rosette type pattern to the leaf structure and is immediately recognizable in the wild due to its unique shape and curly penques. Yuu Baal's careful cooking and distillation bring out the best this variety has to offer. A balance of wild sweets--vanilla, nectarine, golden apple--and wild savor--a touch herbaceous nuance, loads of pepper spice, woodsy aromas, and a saline minerality that is a classic hallmark of quality agave spirit. The smoke on the finish is intertwined with sweet spices like clove and nutmeg and a bit of mace. It's a lovely Mezcal at an even sweeter price. I'd happily drink this all day long.

If you like more than a whiff of smoke in your Mezcal, boy, have you found a new friend! This is wreathed and suffused with it. Think Islay Scotch by way of Oaxaca. On top of that, you can add salt, pine, roast chile, crispy fat, suede, jerk seasoning and parsnip. This is singular, even by the standards of the region. If you want a tipple a step out of the ordinary, this'd be a good place to start.
