Domaine Pacory "K&L Exclusive - Reserve" Domfrontais Cask Strength Calvados (750ml)

While we've long worked with Domfrontais distiller Lemorton for our regional Calvados needs, we recently discovered their neighbor in Mantilly: a producer called Pacory. One thing that separates the brandies of the Domfrontais from other AOC Calvados spirits is the heavy use of pears in the recipe. Domfrontais brandies generally have 60% or more pear distillate in the eventual blend, adding an entirely different dynamic to the flavor. We wanted to see if we could find something with a "high-pear" cepage, preferably with a little age. One of the interesting aspects of Pacory's production is that Frédéric likes to fill at higher proofs than other producers typically do. That meant that a number of his younger Calvados would still be quite powerful. "Would you be open to bottling these at cask strength?" we asked him, wondering if our cocktail-mixing customers might be interested in something a bit more robust. "Bien sur!" he replied. The result is an almost all-pear, five year old Domfrontais Calvados at full proof for a price that's too good to beat. This brandy is brimming with pure stone fruit flavor, bright apples and robust pear, with lovely weight and balance. The color is a golden yellow, much like a pear itself. Distilled from 70% pear/30% apple, it's highly recommended.

Another insane K&L exclusive pricing on a unique and mouthwatering spirit. The high pear percentage of this recipe make a gorgeous contrast to the more typical apple flavors and make this a must try. Growing pears apparently takes a lot of patience, enjoying this takes none.

If I had to choose one word to describe this lovely Calvados it would be purity. The aromatics are almost eau-de-vie like with beautiful pear smells. In the mouth it is soft,round and light but with a certain amount of richness. With a splash of water the above flavors continue but are more subtle and nuanced and the alcohol bite is tamed.

This is only the third Calvados I have tried and I am just sad that I have spent so long without knowing about this amazing style of brandy. Of course the fact that we are directly importing means I can afford the good ones just like with our Armagnacs and Cognacs. This cask strength Calvados has an absolutely beautiful nose, clear and precise almost like an Eu de vie. Due to the fact that this is cask strength a little water is definitely recommended to calm it down and really bring out the flavors. After opening up the pear really shines through along with notes of golden apple and a touch of heat on the finish. Absolutely delicious.
