Outer quote mark Laurence Féraud takes this from some of her oldest vines, crushes the whole bunches lightly into cement vats and leaves it to ferment spontaneously, before moving it into old oak foudres to age 36 to 48 months. The result in 2009 is earthy and dense, a staunchly traditional take on Châteauneuf-du-Pape. Spiced cherry notes emerge with air, as does an appealingly savory, miso-like complexity that lasts. The tannins hold it firm, lending the wine the chewiness of a shiitake. You could drink this now, with miso-marinated pork chops, but the structure suggests it will last well for the next decade or more. Inner quote mark (2/2015)
