Somewhat curiously for a 2003, this actually displays plenty of that classic Chablis mineral reduction nuance on the otherwise ripe nose. There is good richness and plenty of volume to the medium-bodied flavors that possess reasonably good depth and length plus better cut than one would expect in the context of the vintage. An excellent 2003 though it almost is superfluous to say that this is hardly a classic Chablis. Still, given the extremes of the vintage, this retains enough Chablis character to be convincing plus there is lovely complexity. Note further that this will continue to age effortlessly. Tasted thrice with consistent results.

Surprisingly bright yellow. Mint, honey, truffle and a balsamic note on the rather unusual nose, with a hint of citron confit the only clear sign of fruit. Fat, chewy and thick, revealing a hint of bitterness from thick grape skins. The lemon note carries through on the palate of this rather uncompromising, even tannic Chablis. This will get more truffley as it continues to unfold. "Not gone," says Isabelle, succinctly. I would not be surprised to find more flavor interest with further aging, but this wine will never become Chablis-like. (ST)

A spicy version, offering nutmeg and vanilla notes to accent the apple flavor. This shows very good intensity, with a lingering finish. (BS)
