This is a one of a kind dessert wine, but what else would you expect from a late harvest wine from the Canary islands? Harvested in November, fermented without any additions and then it goes into a solera aging system that is made from Allier French oak. The numbers are amazing for a dessert wine; 130 gm/L sugar, 8.8 g/L total acid and a pH of 3.3. Now the real question is what do all those numbers add up to? Delicious, plain and simple. Yes, it is sweet but it has an amazing amount of acid to balance all that sugar. It is also crazy complex. Tropical fruits, marmalade, stone fruits, ginger and other spices, there is a floral component too. There is so much going on here. It is rich and viscous and mouth watering at the same time. It is dessert in a glass, but a salty sheep's milk cheese can be all the excuse you need to open this up before dinner. Why wait until the end of a meal?
