On the palate the wine is deep, full-bodied, pure and absolute rock solid at the core, with a very racy chassis of acidity, laser-like focus and a brilliant, snappy and nearly endless finish. Outer quote mark An overtly floral and distinctly cool nose features subtle spice and mineral reduction aromas that are followed by rich, powerful and broad-scaled yet quite finely detailed and pure flavors that are underpinned by a firm acid spine and an intensely citrus-infused finish. Outer quote mark Pale lemon-yellow. Shy nose shows strong wet stone minerality lifted by a lavender topnote. Wonderfully ripe but quite backward; in a massive and muscular style for Clos. The powerful lemon, grapefruit and stone flavors saturate the palate on the very long back end, but this very closed wine will need a good seven or eight years to express itself. Outer quote mark Bright, pale yellow. Aromas of talc and dusty stone along with slightly exotic notes of orange zest, grilled almond and pralines plus a whiff of fresh vegetables. Silky, fine-grained and voluminous--a bit in the style of the '89--offering subtle notes of citrus peel, fresh herbs, gunflint and salty minerality. Gives a greater impression of sweetness than many of the more austere vintages shown at this tasting. This silky, fairly full, seamless wine finishes very long, with its alcohol--and sweetness--nicely buffered by its tactile dry extract. From the importer: "One of Chablis' most prestigious proprietors, René Dauvissat, with his son Vincent, farms nearly twenty-three acres of meticulously kept vineyards, all in Premier Cru appellations. These vines (4.5 acres of Vaillons, 2 of Sechets, and 9.4 of Forets among the Premiers Crus, 2.5 of Preuses and 4.5 of Clos among the Grands Crus) are splendidly sited on hillsides underlain by Jurassic limestone. Yields are limited to about 50 hectoliters per hectare, modest by the standards of the region."
