Here is why I like Wemyss Malts (pronounced weems) and why I think we should all support what they are doing. 1) They care about the TASTE of whisky and not where it was distilled or who made it, hence why they do not reveal the distillery names on the label. 2) They do not shy away from marketing blended or vatted malts, even though the current trend is entirely focused on single malts, because they believe they can make a better product by blending. To many, 'blending' in the whisky industry is a dirty word, but the Wemyss family knows that blends are the backbone of the booze industry. All premium wines are 'blended', even the best Bordeaux and Burgundy wines, with the best being a blend of the finest different batches of separate wines. The Peat Chimney is made primarily from five year old Caol Ila, but does contain other malt whiskies. It is entirely unchillfiltered and entirely delicious. There are aromas of smoky autumn bonfires and dried leaves that carry over to the palate as well, with a soft and utterly rich mouthfeel.
