Michel Couvreur is a Belgian and an independent bottler of single malt scotch. His cellars are located in Bouze-les-Beaune in the heart of Burgundy. Michel ages his single malts for years in sherry butts and then in demijohns or giant bottles kept in total darkness in the exceptional well-protected underground galleries of Bouze-les-Beaune. The Pale Single is a lighter style of whisky, in a very different style than his other expressions. Expect a quite fruity and floral in bouquet, but with a lingering note of toasted almonds and savory richness. This bottling of the Pale Single Single was aged for more than 10 years in fino sherry casks. It begins its life in the middle humidity part of the cellar before a final 3 years in the most humid part of the cellar. This reduces the original fill strength of 70% to at least 56%, a huge reduction in a relatively short period of time. Before bottling Couvreur slowly reduces to a drinking proof of 45%.

Absolutely fantastic. The Couvreur Pale has inviting malt and floral aromas. In the mouth it is soft, round and malty, with subtle dried fruit nuances. A nice long finish helps round out this wonderful wine.

Ready for the whisky of the summer? Where do you go when the heat means big smoky, peaty flavors do not work as well? Here, this bottle, this delightful and delicious offering from Michel Couvreur. Lovely dense white stone fruit in the nose lead to a seriously elegant Scotch. The play of light fruit and floral notes are just so well harmonized here and are backed up by a tingly baking spice finish. This whisky showcases the deftness that a master blender can have in creating something truly elegant.

A single malt from a single cask from this renowned blender is always a treat. Here we're off the big sherry notes that Couvreur is known for and onto something more malt-driven. Still with that beautiful Burgundian cellar experience, but now pointed with Highland flowers, wild honey, white and yellow fruit. I'm wanting to say this is Clynelish, but cannot confirm. Now that we're able to list this below $100 it's a no-brainer and certainly a unique experience that's not easily replicated anywhere else on the shelf.
