Honig's 2012 Sauvignon Blanc is primarily sourced from their sustainably farmed Rutherford vineyard. Some of the grapes are whole-cluster pressed in order to articulate the tropical fruit flavors of the varietal, and the rest of the fruit is de-stemmed and crushed before being allowed to have several hours of skin contact in order to extract the refreshing citrus/grapefruit characteristics. The wine is fermented at cool temperatures to preserve the aromatic profile, and 10% of the wine is aged in neutral oak tanks to enrich the texture without adding any actual oak flavor.
