2011 Domaine Mittnacht "Gyotaku" (Previously $22)
A soft, peachy white, backed by a nice tang of sweet-tart acidity, displaying flavors of apricot and Gala apple, with a hint of mango and a moderate finish. Pinot Blanc, Riesling, Muscat, Pinot Gris and Gewürztraminer. Drink now.
This cuvée from the cousins Mittnacht is designed specifically for the Asian market--Christophe's wife is Japanese--and because of this goes better with sushi and sashimi than almost any other wine we can image. The 2011 is composed of 40% Pinot Blanc and 20% each Riesling, Pinot Gris and Gewürztraminer. The name comes from the Japanese art of inking a fish to create a stamp. Clean, with fresh acidity, apple skin notes and a hint of perfume.
