5 Sentidos Bicuixe-Madrecuixe Mezcal (uncertified) (750ml)

The nose is all high toned fruits, the palate more tropical. It's full of campfire smoke, cracked peppercorns, roasted chiles, and has a slightly soapy tone with a very clean finish. One of the fruitiest mezcals on our shelf.

5 Sentidos Tobala "Batch TB02-8" (Alberto Martinez) Santa Catarina Albarradas Uncertified Oaxacan Mezcal (750ml)

This minicule 81 liter batch (102 bottles) of Tobala (A. Potatorum) was produced by maestro mezcalero Alberto Martinez and his son-in-law Reynaldo. They harvested 92 wild Tobala agaves in teh mountains of Santa Catarina Albarradas, Oaxaca at approximately 7,500 feet above sea level. The hearts were cooked in an underground over with encino oak for five days before hand-mashing the cooked agave with wooden mallets. The pulp was then mixed with spring water and fermented in underground stone tanks for 3 days. Double distilled on clay pot stills in Septembe ...

5 Sentidos Sierra Negra "SN05-18" (Alberto Martinez Lopez) Santa Catarina Albarradas Uncertified Oaxacan Mezcal (750ml)

This unique agave spirit is made in exceedingly small batches from the rare Sierra Negra agave. The character is unlike any other agave spirit. It has a nose reminiscent of Manzanilla sherry and aging under flor. It is salty and bursting with menthol and eucalyptus notes. It's fresh and dusty at the same time. There is a bit of dried fruit and nuttiness. The acidity is tremendous. We're hard pressed to pick favorites among the Cinco Sentidos lineup, but this is it.

From the importer: "Tio" Pedro Hernandez Arrellanes comes from a long line of mezcaleros. The 72 year old master distiller has been making spirits for more than 50 years in Santa Catarina Minas, where nearly every palenque in town preserves the centuries old tradition of distilling in clay pots. Marcelo Luna and his son Leonardo make the savory Pechuga de Mole Poblano by adding cooked chicken and a mole sauce made of chocolate, apples, bananas, chile mulato, chile ancho, cinnamon, cumin, peanuts, almonds, sesame seeds to the first distillate prior to the second run. The result is a sweet, savory and spicy mezcal unique among pechugas. Produced in Zoyalta, Puebla from Espadilla. Fermented in stone with pure spring water. 5 Sentidos Jabali "Batch JA 03-18" (Alberto Martinez) Santa Catarina Albarradas Uncertified Oaxacan Mezcal (750ml)

This 143-liter batch (176 bottles) of Jabali (A. Convallis) was produced by maestro mezcalero Alberto Martinez and his son-in-law Reynaldo. The two fo them wild harvested 326 pinas of mature Jabali at altitudes as high as 8000 feet above sea level. The pinas were roased underground in a conical oven with encino oak, dried banana leaves, and acacia leaves for 11 days. Alberto and Reynaldo then hand-mashed the cooked agave with wooden mallets, mixed it with spring water and fermented the agave in underground stonetanks with "encino de agua" (tree bark) for ...

5 Sentidos Espadin-Tobaziche "Batch #ESTBZ02-18" (Tio Pedro Pacual Hernandez Arrellanes) Santa Catarina Minas Uncertified Oaxacan Mezcal (750ml)

This 99-liter batch (119 bottles) was distilled from mature agave Espadin and wild-harvested Tobaziche (A. Karwinski). They were harvested around 5,200 feet above sea level in San Jose del Progreso, Oaxaca. Maestro mezcalero "Tio" Pedro Pascual Hernandez Arrellanes cooked hte Espadin and Tobaziche pinas in an undreground conical oven wiht huamuche firewood for five days. After the roast, Pero and his nephew allowed the cooked agave to cool for about a week ebfore hadn mashing it with wooden mallets. The natural fermentation in pine vats took roughly 10 d ...
