"The Gueuze Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. Stout Rullquin is a blend produced by Gueuzerie Tilquin of lambic with Rulles Brune (from Brasserie Artisanale de Rulles). The blend, which ferments in barrels for 8 months before bottling, consists of 7/8 Brune and 1/8 lambic. The blend is made in the barrel, with a blend of young lambics from multiple sources chosen and added to each barrel before the barrels are filled with the Rulles Brune. (lambic.info)
