Szöke focuses on white wines made from the grapes of the Olaszrizling (Italian Riesling), Sylvaner, Hárslevelü (Linden-Leaf), Ottonel Muscatel, Tramini, Király Leányka, Chardonnay, Pinot Gris, and the oddly named Irsai Oliver. The vines are all well over thirty years old and are planted on a variety of soils including schist, loam, limestone and loess. The grapes are fermented in open top wooden vats with 5% remaining whole-clusters. It then ages in old neutral barrels on lees without stirring."

Bid on this 4-half-bottle lot of 1999 Chateau Pajzos Esszencia Tokaji (375ml) (100RP, 98WS). Robert Parker's Wine Advocate: "The 1999 Tokaji Esszencia was eked out without press over three weeks from aszu berries and aged for two years in Hungarian oak. Bottled in 375 and 500ml, it has a bouquet that rivets you to the spot: marmalade and dried quince, then nutmeg, beeswax and even a scent of hickory. It is very mercurial in the glass. Coming back, there is a touch of fresh rose petals and lavender. The palate is incredibly intense, and it is not the sweetness here that is striking, a modest 460 grams per liter, but the acidity -- 19.9 grams per liter. Therefore, it is incredibly fresh and vigorous, almost so that you do not notice that enormous amount of residual slipping down the throat and threatening to overload the senses. It takes some getting used to, but strangely, once inured to that acidity, then it becomes a much easier Esszencia to imbibe. Circa the year 2250, when Earth is

Bid on this 4-half-bottle lot of 2000 Chateau Pajzos Esszencia Tokaji (375ml) (98RP, 96WS). Robert Parker's Wine Advocate: "The 2000 Tokaji Esszencia is the third vintage to be released after the 1993 and 1999, the next in line being 2010. A total of 1,048-liters dripped out the bottom of the vat, delivering 528 grams per liter residual sugar and 10.9 grams per liter acidity (almost half that of the 1999). Bottled in June 2005, it has a more refined, conservative, orthodox bouquet than the outlier that is the 1999, but is no less engaging, with marmalade, quince and honeysuckle aromas that are very well-aligned. The palate is very harmonious, with unctuous, perfectly judged acidity, extremely pure with a sensual texture: in its notes of quince, honey, marmalade, apricot jam and just a touch of truffle. Importer's notes: "Tony Hwang’s purchase of Kiràlyudvar resulted from a visit to Budapest that year, when he drank a Tokaji Aszú recommended by a sommelier. The wine, with its profound identity and razor-sharp balance, made such an impression that Tony drove more than 200 kilometers the next day to Tokaj, where he discovered Kiràlyudvar (pronounced Kee-RYE-oohd-var). Bid on this 500 ml-bottle of 1993 Tokaji Aszu Eszencia, Kereskedohaz Rt. (500 mL). Tokaji Kereskedohaz has changed its name to Grand Tokaji but the winery remains the largest and most important of the Tokaji-Hegyalja region and is owned by the Hungarian state. The winery is known for its expansive cellars that were converted from rock mines first dug 400 years ago. The winery pulls grapes from growers throughout the area, but also owns Hungary's iconic Szarvas Vineyard that was one of two to receive the highest classification in 1737.
