Berta Vazquez, one of Mexico's few female distillers, made this excpetional espadin from 9-year-old agaves. Horse drawn tahona crushed the agave after cooking in an earthen oven covered with volcanic rocks and fired with oak and guamuchil. Double distilled on copper alambiques in 2018, the resulting spirit is incredibly flavorful. It has a savory scent like a fresh cut rubber tree and a texture and weight that is oily but not resiny. Mezcalero Tio Conejo (Uncle Rabbit) uses donkeys to transport the agave back to his distillery where they are fermented and distilled in the village.
