The ripe and classic style of the 1996 vintage, coupled with quite high acidity has combined to produce a magical Cristal Rosé, soaring from the glass in a celestial blend of white peach, rye toast, a touch of cranberry, chalky minerality, gentle smokiness and bread dough. The power and richness of Goisses is there, but in the background. It will be many years before the 2007 blossoms into a complete, fully expressive Champagne. Even so, it is striking today. With time, hints of lemon confit, chamomile and marzipan develop in the glass, but readers will have to cellar the 2007 for at least five years, maybe more, to get the full Goisses experience. Bid on this magnum of 2006 Billecart-Salmon "Cuvée Nicolas François Billecart" Brut Champagne (1.5L) (97VN, 96DC, 96JS, 95RP, 95WE, 94WS). Vinous: "The 2006 Cuvée Nicolas François Billecart is shaping up to be a jewel of a wine, but it needs time to be at its best. I am surprised by how tightly wound it is. But that only makes me think what it might develop into with time in the cellar. Lemon confit, white flowers, mint, crushed rocks and sage meld together in a bright, crystalline Champagne endowed with terrific purity. The 2006 is 60% Pinot Noir from the Montagne de Reims and the Vallée de la Marne and 40% Chardonnay from the Côte des Blancs, mostly done in steel, with just a touch of oak, around 5%.
