He came to Etna in the early 2000's and bought his first half hectare of vineyard in the Contrada Santo Spirito in 2007. His holdings soon grew to two hectares of land."

Azienda COS on the extreme southeastern tip of Sicily is an estate with an undisputed mastery of the Sicilian Cerasuolo style. The "normale" Cerasuolo routinely lands high marks and praise from the leading wine press each vintage, but the Delle Fontane takes this obsession with quality a step further. The estate employs a "natural winemaking" philosophy with this wine and it's produced in exceedingly small numbers, usually on the order of less than 5,000 bottles.
