Nocellara del Belice is emerald green, very creamy and intensely fruity with no bitterness and a lingering finish of artichokes. The aroma of this oil suggests an intense oil, but the taste is not harsh at all. It is sweet, delicate and lovely. This monocultivar when cured for table olives is called Castelvetrano, named for the major city in the Valle del Belice. Paesano Organic is a Two-Time Gold Medal Winner – L.A. County Fair

Produced entirely on the Basiricò estate in Trapani, Sicily. The high presence of Cerasuola, an olive varietal found only in the area, gives the oil an intense fruity, herbaceous and grassy aroma. It has a very slightly bitter and piccante finish. Its intensity is tempered by the sweeter Nocellara del Belice, and especially the floral character of the rare Biancolilla.
