Vinous: "The 2018 Cabernet Sauvignon Paso Robles shows just how appealing the vintage is. Aging in steel and bottling early brings out the aromatic, juicy side of Cabernet. The 2016 is not exactly complex, but it is absolutely delicious. It will make a terrific house pour over the next few years. (AG)" (09/2019) K&L Notes: Wine Advocate: "Readers looking for killer values need look no further than this Foxglove releases from Jim and Bob Varner." (JD, 10/2016) Great wines at very good prices. From winemaker Andrew Jones comes this esoteric delight, a lightly sparkling (and lightly colored) rosé of Cabernet Franc made in the pétillant naturel style. Timing is everything with this wine as it must be bottled and capped with just the right amount of remaining natural sugars to continue fermentation (thus, creating captured carbonation). It's not an easy trick to pull off, but when it goes right, it really goes right.

About this producer: "Opolo’s estate vineyards were established from 1994-1996, with sites on both the west and east side of Paso Robles. The topographically diverse, coastal landscape of the westside vineyards provides for an intense and unique flavor profile. The heat and dryness of the east side vineyard make it an ideal microclimate for growing Bordeaux varietals. Home to a wide range of varietals, the estate vineyards help allow the team at Opolo to create many unique single varietals as well as award winning blends."

Winemaker's notes: "This is one of my favorite wines to make each year, because I believe that producing a truly stunning Pinot Gris is actually quite difficult. Modeled after an Alsatian style of PG, its focused on texture and elegance, with the perfect combination of richness and ultra bright acidity. My block at Spanish Springs is all very low yielding hillside fruit that grows in about 80% sand. 12 hours of skin contact precedes a very gentle pressing, followed by a slow fermentation in neutral oak barrels. Twice weekly lees stirring helps to build s...

Winemaker's Notes: "Made entirely of Syrah from Mossfire Ranch. This vineyard was planted in 1996 on steep hillsides and a rolling valley at the confuence of sun, snow and sea. The vineyard weathers 40 degree diurnal shifts. The extremity of the climate creates fruit of uncommon concentration and uniform ripeness. This newly released Rosé screams watermelon, young strawberry, orange peel and stony minerality. Flavors of melon rind, hibiscus and salinity dance across the palate while the juicy acidity rounds out this lively fun-going wine. The brightnes...
