It represents a synthesis in style between the elegance and complexity of a French wine, and the power and ripe fruit of a top-flight California offering. An opaque purple color is followed by aromas of cola, chocolate, and macerated jammy black cherries. This super-concentrated, high strung, packed effort appears to be as tight as a coiled spring. There is great fruit on the attack as well as an imposing structure, but it feels like that is all being held in check at present. Robert Parker's Wine Advocate: "The 1991 Cabernet Sauvignon is another upcoming re-release from the winery’s library. It is one of the most unique wines I have ever tasted from Togni. The warm year yielded an abundant crop. At the time, Togni also made a white wine. Because of the size of the crop, the harvest took longer than normal, which meant the red grapes spent a little longer on the vine than they would have otherwise. The 1991 presents an intriguing combination of raciness from the super-ripe fruit, but within the classic Togni framework. Vinous: "Another stellar wine from Mayacamas, the 2015 Cabernet Sauvignon continues to be quite reticent, which is probably a very good thing for its long-term prospects. Even so, the 2015 is dense, powerful and super-concentrated, with a level of finesse in its tannins that separates it from so many wines in this challenging vintage. Time in the glass brings out graphite, menthol, licorice, sage and spice notes that add a sense of gravitas. I would prefer to cellar the 2015 for at least a few years to allow some of the baby fat to melt away. I expect the 2015 will always remain an exotic, full-throttle wine relative to the norm here. "Date Night" is the flagship wine from Phifer Pavitt Winery, which is located not far from Eisele Vineyard near Calistoga. Since its inception in 2005, Phifer Pavitt has had great success relying on word of mouth recommendations and personal referrals rather than critic reviews. The 2016 "Date Night" is crafted by winemaker Ted Osborne. It is comprised of 98% Cabernet Sauvignon with 2% Petite Verdot and spent 18 months in 80% new 225 Liter French Oak barrels.

The color is even denser than the Reserve Claret's, and the bouquet offers additional notes of Chinese black tea. La Jota Vineyard Co. was founded in 1898 by Frederick Hess, an immigrant from Switzerland, who established a German-language newspaper in San Francisco. No doubt influenced by other European immigrants involved in California's wine industry, Hess purchased 327 acres on Howell Mountain to plant vineyards. Prohibition did not spare La Jota, and it became one of many "ghost wineries" until Bill Smith purchased it in 1974. 1985 represents just the fifth vintage at the revived winery with young vines planted by the new owners.

It is one of the great wines of the vintage in a year when a handful of California producers made profound Cabernets (i.e., Robert Mondavi Reserve, Dunn Howell Mountain, and Chateau Montelena). The wine is beginning to shut down, but it still displays a rich ruby color and an intensely spicy, fragrant nose of toasty vanillin oak, cassis, and cedar.
