Bajta is the all natural project from Kobal vigneron Bojan Kobal. The Stajerska wine region is known for its steep slopes and diverse soil types including sand, clay and marl. Bojan feels it is perfect for producing his low intervention Bajta wines. The Blaufrankisch Pet Nat sees about 4 hours on the skins and then is bled saignee-style.
